Macross Frontier- a mecha animé ten times better than any gundam animé you can find.

Gurren Lagann- love the story, the action, the animation and the babe.

Tsubasa: Reservoir Chronicle- a Clamp must-see.

Nodame Cantabile- Orchestra themed animé, quite nice to watch.

Fullmetal Alchemist: Brotherhood- Duh.

Code Geass- Interesting storyline, not my type of animé though.

Tekkon Kinkreet- animé movie of the 21st century yet.

Metropolis- animé movie of the early 90's

Princess Mononoke- studio Ghibli; nothing more to say.

No one's recommended To Aru Majutsu no Index yet? FOR SHAME.
It's a really good action-fantasy series about science and magic, and pretty funny too. It's too good to not try watching, I tell you.

And for Zero no Tsukaima: if you appreciate a good storyline with nice action scenes, try watching the first season, it's good. Other seasons... Not so much. :\
